Easter Eggs - Colored with Onion Skin!

In light of this Easter weekend - here is a quick way to naturally dye your eggs using onion skin! Origins? Unknown, but seems to be common in Europe. I learned this particular way of cooking eggs from my mom. Thanks mom!



Using basic methods to hard boiling eggs, this recipe incorporates onion skin to add colour. The quantity of each ingredient depends on how many eggs you choose to make.

In this recipe, brown eggs were used, but white eggs will work just as well.


Tips:

  • Enjoy them naturally or with a sprinkle of olive oil and bit of pepper.

  • They are a great healthy snack, or a great addition to a dinner plate with other sides.

  • Unless planning to eat them over the course of 1-2 days, may be best to refrigerate.


 

Ingredients (based on 9 eggs):

  • Water (1.5 litres)

  • Eggs (9)

  • Onion peel (from ~ 5 medium sized onions)

  • Salt - to taste (here 1/2 tsp was used)


Instructions/guide (based on 9 eggs):

  • Add water to a kettle and set to boil.

  • While water boils, add onion skin to medium sized pot (creating a nest for the eggs :P ). Add eggs, spreading them out. Pour boiled water over eggs and onion skin - just enough to cover it all (may not need all the water). Add salt.

  • Set the stove top to medium heat. Since we poured in boiling water, it should begin to boil fairly quickly.

  • Boil for ~15 minutes.

  • Turn off heat and let eggs sit in the dyed water for about 20-30 minutes. This will allow them to absorb more color.

  • With a spoon, remove eggs from pot and transfer into a bowl - and they are ready to enjoy!
